I have done this recipe several times. It is impossible to fail .
You will need:
- 900 gr strained yogurt
- 3 tsp black pepper
- 3-4 tsp salt
- 2 tsp oregano
- 1 tsp thyme
- 1-2 small dried hot chili peppers cut lengthwise
- 1 bay leave
- 2 cups olive oil
Mix together the yogurt, the black pepper and the salt in a large bowl. Empty the mixture in a cheese cloth and tie it from your kitchen tap. Leave it there to drain for 12 hours. Take one tbs from the mixture and make small balls. Put them on a plate and leave them uncovered in the refrigerator overnight to dry. The next day put the cheese balls in the jar, sprinkle with the oregano and thyme, add the bay leave and the chili pepers and cover with olive oil.
You can keep them in the refrigerator up to 3 months.
